I cooked Raw Vegan
Usually I never cook, in recent years it has only happened a few times, my problem is that whatever I do needs to be done almost perfectly, if not perfectly. This to my misfortune does not sit well with the cooking, because it takes a long time to prepare a good dish and put in the passion to experiment combinations. Luckily for me, in our house we often make challenges, one of my challenges for this month was to cook once a week while the second was to eat raw vegan twice this week. We created these challenges to push us out of our comfort zone and to motivate us to make new experiences, the challenges are choosen by the partner and blindfolded you pick one out of the group of challenges. Very often, these challenges have led us to discover some things that we like, for example, after a whole day with the raw vegan diet, I decided that after completing the challenge I will take one to two days each week to continue to do this diet to regenerate the body. I am not for extremism, and probably I would never become a raw vegan, but one day a week it definitely helps to cleanse the organism and add foods that you wouldn't eat normally. Today, in order to prepare lunch I went to the grocery store and bought all the elements to prepare the two courses. Not being able to cook the products as everything needs to be raw I decided to create a carrot salad with pineapple and raisins. As a sauce to flavor the salad I made a curry cream adding coconut milk and peanuts. As a second course I made a delicatesse of avocado on wholegrain crackers. Katya finished everything, and asked for an encore so I would say that she approved me as a chef! For me the lunch was delicious, but the preparation took me more than an hour. In case you need the recipe don't hesitate to ask, it's an easy dish to prepare, it only requires time to peel the carrots. Bon Appétit!
